bore is the size of the hole that fits onto the hub spiggot.

anything bigger than the standard 56.1 will be sloppy. i personally wouldnt fit anything bigger than oem, but many have done without problems.

offset affects where the wheel centre is. if its small, it might rub on the indide of the wheel arch or the suspension strut. if its too big, it will stick out of the wheel arch, and therefore be illegal
