Yes, you would just get the full temperature fuel returned to the tank and the further your drove, the hotter it would become, especially if there is not much fuel in the tank to disperse the heat. The stat just diverts it to flow through the cooler, or not through the cooler - thus bringing the tank's contents up to a slightly warm temperature.
