No spam allowed thats me out then, oh does that count as spam?) or how about this:


SPAM and Mushroom Ramekins

Prep time 10 mins
Cook time 12 to 15 min

175 grm button mushrooms finely chopped
200 grm Spam finely chopped
2 tablespoons of grated parmesan cheese
1 tablespoon of finely chopped parsley
1 egg, beaten
150ml single cream
1 tablespoon chopped lemon grass
salt and pepper
flat leaf parsley to garnish


Grease 4-6 individual oven proof soufle dishes. Mix together all the ingredients and spoon into the dishes. Bake in a preheated oven, gas mak 200c / 400 f ( gas mark 6), for 12 mins or until just firm and serve.
