Default Stargazy Pie

Stargazy Pie is a traditional Cornish dish. I made one today for a cooking competition... first pie I've ever made. Something a bit "different" from the norm, and it turned out brilliantly! will be interesting to see if I win, or if people are freaked out lol...

The competition this time is to do a recipe featuring "oily fish" (salmon, trout, mackerel, sardines, etc). The prize is... you get to pick the ingredient for the next competition! It's a regular feature on the Pistonheads food & drink forum.

Ingredients... trout, salmon, cod, scallops, eggs, bacon, onion, double cream, salt, pepper.
(The carrots and sugarsnap peas are for accompaniments)
Not shown... English mustard, shortcrust pastry, fish stock and fresh parsley.


Fish, hard boiled egg and parsley added to blind-baked pastry base, ready for the reduced sauce (made with fish stock, onion, bacon, double cream, mustard and parsley)


Pie filled with sauce and topped with pastry lid and hand made "decorations" (as you can see I can't cut a star shape to save my life!), then glazed with beaten egg ready for the oven.


Pie baked to perfection!


Served with lightly stir-fried sugarsnap peas, and roasted carrots.

Dunno, will find out in about a week's time. But I have some previous entries I made...

Fillet steak with seared scallops, bacon, black pudding and a pea puree


Ciabatta bread pizza


Chicken thighs wrapped in parma ham with a spinach and cashew nut stuffing, and dauphinoise potatoes
