1st attempt to cook a duck
 
1st attempt to cook a duck, I've had to start now. 2 hours for this, 6 hours for that. At this rate I hope the wife wont be hungry when she gets home.

Thank you yes it was cooked. Quite nice with home made special fried rice.
Would I cook it again, I don't know. Although I did not spend all day cooking I had to rub with salt and leave 2 hours, blanch then leave hanging for 5 or 6 hours.
Cooking, that was a laugh. I had to hang it from the rack placed on the top row of the oven. The skin was not eaten but I had expected it to have been drier then it was.

Tonight is home made Thai Green Chicken. It is up against a very very nice set of spices the wife gets already mixed from an on line place. Don't know what spices it contains but it is very more'ish. Also used a nice Thai Green Schwartz mix a few weeks ago.

So we will see, home made or packet mix, I think the on line pack mix will be best.

Best Thai curry pastes are by Mao Ploy. They do a number of Thai curry pastes, red, green, yellow, massaman and more. Available in most supermarkets except Tesco. Tesco stopped stocking it but have "Flying Goose" curry pastes instead, don't buy them! They're too wet and not nearly as good as Mae Ploy.

Thanks, this time I made my own paste. Did look and smell awful but tasted really quite good.
Perhaps a bit wet, 1/2 a cup of coconut milk and 1// a cup of water so may be less water next time.
