Simple question really can I tax a car with no MOT.. ?

Simple answer is No, unless it is over 40 years old and registered as an "Historic Vehicle".

But the insurance will most likely be void if you use the vehicle on a public road without tax or MOT

Correct - the critical thing is that it must be prebooked.

Yes, there’s no other way to get a car through an MOT if it has expired

Or go to the nearest post office that tax cars (not all if them have the ability) Also taxing at the post office gives you the option to pay monthly ;)
That is assuming its got insurance.
