Unless I'm missing something, all this talk of practicality v off road fun is academic, isn't it? OP is not going to be driving anything on the road for at least 2 more years.
If you want an off road fun car, go for something that has been built specifically for mud plugging. There are always loads of part built or 'nearly finished' projects on eBay.
