So I don't need to pump the pedal (with the nipple closed) between each nipple open/pedal down stroke? Perhaps my assistant at the pedal hasn't got the right technique - would to slow or to fast on the pedal be a problem?

Basically your doing the correct technique , but you can always get your assistant to weight the pedal slightly as you open bleed nipple. Then push down with a nice steady stroke . Are you getting a good steady flow of fluid on each pump or just getting air ? The most critical part for your assistant is not to release the pedal until you have fully locked off the bleed nipple .
Another method you could try is gravity by just opening your bleed nipple and keep topping your reservoir to see if it will flow through
