Have you tried the boost control solenoid, the little grey unit that is usually fixed to the air filter housing...I had exactly the same symptoms that you mention on my 1.8t I had years ago..it was the boost solenoid at fault.. would be worth also changing the vacuum pipes for silicone ones .. worth a shot ..
