Not so much what I did, as what I learned.
Checked the bottom hoses/PRT to see if yesterday's refitting had cured the leak (so far so good...) and was surprised to discover that the thermostat hadn't actually opened!
Now, I know it works properly, and I had very nice stable temperatures 88-90C all the way back from work (32miles of A roads with a lot of 0-60 deceleration), so can only conclude that opening up the coolant passages in the head has a big effect on running temps...
