What a tale of woe. I've heard of this before. Use your number to scrap a similar stolen car. You've got the engine number on the V5 which will help, of still there. If they're scumbags, they may have got rid of the evidence.
In another forum a car parked near a scrap yard, legally on the road, was lifted into the scrap yard and scrapped. The scum got caught as they left the engine and the numbers matched the V5.
