Matt's thermostats are much better quality than the circoli item I tried before, and I'm now getting temperatures up to 89 although only briefly. It seems to stabilize at 85, rather than 79-80 like it was with the circoli.
Hopefully that will make a difference - it certainly has to the heater, it's incredible how much difference a few degrees makes.

I may not be grinding them down forever, as some silicone lubricant (or equivalent) is good at getting them in too. It's more about the decent quality 'stats than anything else.
