That takes me back a bit. I spent some years as a butcher and later district manager and then as a meat inspector in a slaughterhouse. Don't know about the present day but at that time (1960) local bovine carcasses went to all butchers and supermarkets (Sainsbury, Tesco, and Coop) as well as independents.
