It is catering for a different market than Aldi etc.

Not really that much different, they sell a mixed bag of food, just as Aldi/Lidl do. Tesco/Asda/Morrisons etc. had to learn to be more competitive on price. It's not true that the coop have no big stores, they just don't have as many, they tend to concentrate more on the smaller convenience sized ones - but even so they are not competitive compared to the other convenience stores around them, on identical products.
