The S function (Sport) is delaying the automatic change upwards if you want 'spirited' motoring as opposed to pre-set moderate progress.
It holds the gear you are already in while accelerating to a higher speed for the automatic change up. The effect is more noticeable when the accelerator is used with, er, enthusiasm.
Some of us drive with the pedal pressed only halfway down, believe it or not. But, just occasionally, I've actually seen others doing it. Shameful.
