The exhaust manifold needs releasing to remove the head, but you can leave manifold connected to the exhaust. The exhaust flexi gives you enough movement to withdraw from the studs, which often undo rather than the nut anyway, just support it while it disconnected from the head , Same with the inlet manifold ,
With a turbo you may have to release a clamp under the sump (if fitted) and release the turbo return oil feed at the engine block . Also removing the alternator top mounting bolt lets you swivel the alternator for better access to manifold
