I have exactly the same issue. Mine started after I had the top strut bearings changed. Temp gauge read like 3degrees then it gradually righted itself! Then today I got in after work and it was -30. It eventually got up to 18 by the time I got home. Since it takes time to right itself, for me it has to be a dogey connection. Which means the wring somewhere will need replacing. I haven't taken the bumper off yet to look but have you tried spraying some wd40 into the sensor plug contacts?

Go for the 6 way big grey connector and start there...if ts clean and dry I'd run a couple of temporary wires to the sensor...

Follow the bumper loom back and it lives on the chassis leg.

To separate the connector, squeezethe tab on the bumper side of the connector,it will be tight, so you will need both hands,and if you have the engine under tray,it will need disconnecting from the fron bumper and wheel arch liner.
