Towards the end of the 19th century there was a famous French chef called Albert Bisse. He was the foremost "celebrity"chef of his era, and cooked for royalty and the rich in their palaces and mansions:
Until one fateful day when a diner contracted food poisoning from one of his dishes and tragically died within hours. Overcome with remorse, his reputation in tatters, Albert decided to travel the world collecting new ingredients and recipes with the intention of publishing a cook book under a pen name. His faithfull sous chef, Christophe, at his side, Albert set off on his gastronomic challenge. Africa, India, China, Japan, all over the world they journeyed, largely without incident except once when they were in the Amazon Basin, Christophe was hacking through dense jungle when the machete slipped and cut all the toes off of Albert's right foot. Determined not to leave them there, they dropped the amputated appendages into a small pickling jar to take them home with them. A couple of years later, Albert's book was published to worldwide acclaim. He was welcomed back into Parisian society and could afford to open his own restaurant. On the opening night the crowned heads of Europe, opera stars, writers and influencers all gathered at the new premises to endorse his new venture. Unfortunately, in the kitchen, there was a mix up. Albert's toes had been stored on a shelf and a cook had mistaken them for truffles and used them in a sauce. As service was called and the plates left the kitchen, Christophe realised what had happened but it was too late to stop it. Happily, the diners loved the unusual flavour with its unique ingredient and that, dear patient and determined reader, is how Bisse Toe Gravy came about...🤣
