It's possible to weld aluminium and stainless using MIG with different shielding gases, but from experience it's not worth it, messy to say the least.

To weld stainless and aluminium nicely you'll need a TIG set capable of AC/DC, not cheap although the Chinese sets are getting more reliable and cheap.

Local colleges usually offer night classes, closest to me is Leeds.
A couple of hundred quid last time I looked.

Alternatively you could do what I did, I bought a 2nd hand MIG from the free ads and built a car.
You can see which end I started welding first, one end of the car has noticeably better welds

Have a mooch around http://www.mig-welding.co.uk/ it's the best resource for amateurs wanting to weld

Practice makes perfect. Just get a few scrap bits of metal and give it a go.

Of course you seem to have chosen two of the most difficult metals to weld for starters.

Give a bit of mild steel a roasting to start with.

Very true, it's all down to practice.

Mild steel is the only thing I weld now, very easy to do, my son made his first passable weld at 9 years old

I use CO2, not ideal but very cheap, no rental on the bottle and £15 for a refill.

These days rust proofing on cars is so good I hardly ever get asked to patch cars up, I did make this stove over the weekend out of an old gas bottle and a pyrex dish though For my shed.

Although CO2 isn't ideal, welds can be a bit raised and it can spatter a bit, you can get decent welds using it.

As said get on the mig welding forum and learn.

Dont buy the cheapest mig and gassless isn't great. Something like a Clarke 130 to 160 turbo will be fine for most jobs.

I have a couple of migs but really like my 151t though in my shed I have a ac/dc tig for alloy and stainless and my other shed I have my stick welder.

Start with a good mig and thicker steel.

Most first timer problems is a rubbish cheap welder

Being as you are not too far away, once you have some kit, I can offer some advise or tuition if you need it.
I am certified to subsea level in tig ally and anything above that.

You might want to look at getting an automatic mask it makes it much easier to start your weld using one and much less chance of getting welders flash which isn't very nice as I found out many years ago when I used the wrong mask to weld my mk1 golf
