use a watermark program, or simply add something onto them in a paint package?

there is a free one here, although I have not tried it

Don’t forget to include a copyright sign in front of your name, just type ALT 0169 to get, ©.
The numbers must be typed from the number pad.

Would you know what code I must use in my eBay listings to stop people "right clicking" and copying my text etc.

One seller used a very clever code, when you right click on his text a windows box pops up and says"GET YOUR OWN!!"

I assume I would have to submit the listings in HTML format?

If you write it in HTML you can add all sorts of things.
I've had this problem myself in Past with Laptop sales.
Take it as a compliment then get EBay to take it off for your Copyright.
