I've personally found that the boot carpet seems to hold moisture badly, especially the trim in a saloon.
I take them out and use a bathroom mould / damp remover spray from pound land and it has honestly solved all the issues with any of my cars that don't leak but just seem "damp". That and the boot wood once wet always sweats, you really need a piece of marine plywood which is treated and won't keep repeating the cycle.
