Pizzas anyone?
Just had a very different night out, and good fun it was too.
Our favourite restaurant is closing, very sad time all round as they are very "sympathique", the atmosphere is very "familial", but even worse, he makes the best pizzas in the world (helped enormously by the "feu de bois". So tonight I spent 2 hours under the watchful eye of the master while he took me through the preparation of his recipe for the pizza base dough (all done by hand by the way, no machines here), how to prepare individual bases from this, how to make the tomato sauce topping, and, if you happen to have one in your garden, how to get your "feu de bois" ready for cooking in. Great fun all round. I now know how to make the dough for 100 -110 pizza bases! Mick |

Due to the unprecedented interest in this post, I thought I would add ChapterII.
Tonight I was let loose by the maestro to prepare 2 pizzas for me and t'other 'alf, after getting the ingredients list for our favourite, Pizza Hollandaise. Great fun, and at the end, 2 great pizzas. I will be very sad to see the place close down. Bon appêtit Mick |
