That's what the adjuster is for.

Well done for your expert diagnosis by the way. It's amazing what can be learned by observation rather than convincing yourself at the keyboard that it can only be the head gasket.

Just a note to say the handbrake is now fixed: both sides work and release properly unlike before. Thanks to everyone who contributed to this post - now I just need to fix the front indicators and have the sills welded (again!).
