I also don't think the EGR helps warm the engine up - at very low temperatures (-10°C or lower iirc) it stays open the whole time to increase temps but in normal conditions and with normal opening it should actually reduce combustion temps.
the EGR is primarily there to reduce NOx emissions, the temp reduction is a bonus though how much it lowers temp idk

In which case an egr bypass may not be such a good idea, if you want the car up to temperature as quick as possible?

Its a trade off between quicker temps or slightly more performance as when the exhaust gas has been passed back into the combustion chamber there is a lot less oxygen available to combust resulting it less performance than if there was no egr

But a diesel engine is nowhere near stoichiometry, so that's not quite the case.

EGR is basically a diluent gas containing a large quantity of water vapour, it is basically in inert heatsink for the gas charge in the cylinder, reducing peak temps and thereby reducing NOx.

EGR operates at low-moderate load (over the NEDC operating range).

As long as they're kept clean, the EGR doesn't tend to cause too many issues on our cars (save for clogging up the inlet manifold).
I've actually reconnected mine, as I found I had the water-cooled EGR. I hit middle on the temp gauge after just a few miles, and noticed this increased a lot with the EGR disabled.

I was under the impression the water cooled egr pipe was fitted solely to the diesel automatics.

Either way, if you have one get the bleed screw replaced as they degrade and rot. Mine leaked, and as the pipe gets hot it evaporates and you never notice.
