Default Kaiser Stat setup still running cool

Hi Everyone
I have a MG 190 V6 replaced the plastic stat setup as was having cool running problems, So upgraded to the Kaiser setup which looks great but alas still runs cool around 80 ,Bit disappointed after all the work as i went for the full strip down manifolds off etc ,First time i did the Keyhole method when fitting the plastic replacement but decided i wanted to check and replace all gaskets and any other issues i found.

i realise at least i could open the Kaiser stat up to exchange but what with ??? Also im not sure if its possible to replace the stat in metal housing in situ as the nuts on the bottom of the housing look so difficult to hold while you undo the Allen screws, Those nuts should be welded in place to make the job easy to do.
