Default Cool Running

I’m not yet entrenched in the many (apparently) foibles of 75 KV6 ownership, but learning on the hoof! Using the dash diagnostics (7.0 etc) the coolant temp was holding steady at 62-65 even after a run up the South Downs from Goodwood Motor Racing circuit to Goodwood Horse racing circuit - the Trundle, which both pleased, for not overheating, and surprised. Reading the numerous posts here, it seems as though this is not actually good, and I have concluded the satanic thermostat needs changing? Assuming this is called for, I wonder if anyone could point me in the right direction as what bits I’d need to carry out the change, as like to have everything to hand before I start!! (Or hand it over to my indie!)
