Everything you'll need can be found at http://forum.xda-developers.com/forumdisplay.php?f=1531 including rooting guides and custom ROM's. There appear to be a few Android 4.3 ROM's out for your phone which look OK. Just be warned though, do things wrong and you may end up turning your HTC One S into an expensive paperweight! Some phone's are practically 'un-brickable' and fairly safe to root however others can be permanently broken by applying the wrong ROM in the wrong way!

As long as you follow the guides to the letter you will be OK, and also read through each guide completely before even touching the phone, that way you'll know what to expect and what to have to hand. That's a good question, I've no idea if phone shop's offer rooting as a service?
The Nexus is an awesome phone and gets all the latest updates without the need to root. I sold my Galaxy S3 and bought the Nexus and haven't looked back, in fact it's so good it's the first Android phone that I haven't root'd and installed a custom ROM on!

Ah, stock Samsung ROM! Surprised it slowed the device down, did you try a factory reset after installing it, that can sometimes cure the problem.

Yes and nothing. It was late coming out for the note because they where having problems with it, I just think they rushed it and it didn't agree with it. I remember someone else on here having trouble with it too.
