Would also check your fuel filter ( under rear passenger seat offside) - as you have a 2004 she can be prone to fuel filter syndrome - as you have a metal manifold i suspect a previous owner will have put the fabled orange clip on the filter - FFS is cuased by separation of the fuel filter leading to difficult starts then non starts - I suspect if your car has been cared for it will have already been done. The clip maintains the integrity of the filter.

Have you tried the boost control solenoid, the little grey unit that is usually fixed to the air filter housing...I had exactly the same symptoms that you mention on my 1.8t I had years ago..it was the boost solenoid at fault.. would be worth also changing the vacuum pipes for silicone ones .. worth a shot ..
