A good quality stainless fastener will have at least 80% of the tensile strength an 8.8 grade fastener will have. Higher grades exceed the tensile strength of an 8.8 grade fastener which is likely what’s fitted currently. So provided you get at least a 50 grade you won’t see a big drop in the capacity. If you are concerned, fit two.

You could swap and have no issues, however what you may encounter is gauling of the nut and spindle next time you want to remove it. Stainless loves to pick up...

The damper rod is chrome plated steel.

The nut in question has an oval thread! It is not a usual nut.

Self-locking; I came across one of those on the outer balljoint to hub clamp.

Default Genuine FX112047 nuts (NLA at Rimmers)

....appear to be crushed slightly to provide more friction. I have a few kicking around if anyone wants a couple.....

Apologies, you are correct, hard chrome plated. You can get bright zinc plated which is shiny if that’s what your wanting.

Be careful with those self locking type nuts, they love to ruin the thread at the end if they are poor quality or the threads are damaged

That's precisely what I did. Cleaned and polished the nut, then masked up and a quick spray with clear coat to stop it degrading. A few years on, it still looks like this:
